Meat proteins from both the deli and the butchery department are collected. The food leftovers that can go into the collection bin are meat, fat, bones, deli meats, sausages and any vegetables that are mixed with the meat. Each roll has a minimum of 20% upcycled meat.
No meat protein that has ‘gone off’ is used.
In short, ‘upcycling’ is a way to reduce food waste and thereby help the environment, by creating high quality, nutritious food products from food ingredients that would otherwise not be consumed, and would in most cases, go to waste.
By using ‘left over’ and unwanted ingredients to produce new nutritious foods we are helping to reduce food waste and have a positive impact on the environment.
Upcycling is one way to reduce food waste and help the environment. “Upcycled food businesses are preventing millions of tonnes of food waste each year, equivalent to millions of pounds of CO2 emissions prevented, and millions of gallons of water saved’.
